Mackerel, Walnut, and Orange, Beetroot Salad

This refreshing salad is a good source of omega 3 fatty acids. Omega 3 fatty acids can help to lower blood pressure, whilst also boosting your memory.

What you will need:
150g cooked mackerel
80g watercress
1 blood orange
100g beetroots, sliced into small chunks
30g feta cheese
30g walnuts, chopped

For the dressing:
2 tablespoon olive oil
1 tablespoon fresh orange juice
1 teaspoon wholegrain mustard
1 teaspoon honey

How to make me:

Using a sharp knife, remove the peel and pith from 3 quarters of the orange and cut into segments.

In a small bowl, combine the dressing ingredients and combine with the squeezed juice of the remaining orange quarter.

Now, in a large bowl, add the watercress, orange segments and beetroot, and then toss with the salad dressing. Now serve and top with mackerel, walnuts and feta cheese.
