250g minced chicken or turkey
1 tbsp rapeseed oil
A handful of fresh coriander, finely chopped
1 tsp dried thyme
A handful of fresh chives, finely chopped
Grated zest of 1 lemon
1 tsp salt
1 tsp cracked black pepper
1. Preheat your oven to 200°C/fan 180°C/gas 6.
2. Combine the minced chicken with the rest of the ingredients in a large mixing bowl, mixing with your hands. Take care not to mash the meat too much, which would make the burgers heavy. Form four good-sized burgers and place them on a baking tray.
3. Cook the burgers in the oven for 25 minutes, turning once. Serve each topped with a dollop of the beetroot relish and a green salad alongside.
