Bircher muesli (Serves 3) 340 cals

3 apples (2 for juicing and 1 for grating)
120g porridge oats
1 handful flaked coconut
40g blueberries
20g dried cherries
30g whole blanched almonds
2 tbsp of low fat yoghurt
1 pinch cinnamon

 

1. Juice two whole apples with a big squeeze of lemon juice (this will help to stop the apples browning), then pour into a bowl.
2. Grate the other apple, you don’t need to peel it, just grate until you get to the core, then add this to the juice in the bowl.
3. Add the porridge oats, flaked coconut, blueberries, cherries, whole almonds, yoghurt, cinnamon and then mix together, place in the fridge and leave for 15 minutes (it shouldn’t be stodgy so you may need to add more yoghurt to loosen the mixture)
4. Bircher muesli will keep in the fridge for 5 days  

You can prepare this then put into small containers to be taken to work for breakfast (along with a juice). It also makes a great mid-afternoon snack.
